Almond Crusted Chicken Tenders

 

I had chicken breast and a bag of almonds…so…why not combine them.   It’s really not that hard.  In this video and recipe, I’ll show you how to make almond crusted chicken tenders, baked broccoli and some mac n cheese for the kids.  Check it out and comment below.

Almond Crusted Chicken Tender Recipe

Ingredients

  • 2 cups of almonds
  • 3 large eggs
  • your choice of spices (Tony C, Lemon Pepper, Garlic Powder)
  • 4 boneless, skinless chicken breasts (split in 3 pieces)
  • 2 cups of all purpose flour
  • 1 1/2 cups Panko bread crumbs
  • 2 1/2 cups corn oil

 

Chicken Directions
Using food processor or small-chopper, finely chop the almonds.   Place chopped almonds in a container next to the flour.   Add panko bread crumbs to chopped almonds and mix well.   Scramble eggs in medium sized bowl to prepare for the dredging.  Using the spices, season the chicken to your liking.  Heat the corn oil to 35o degrees in a deep fryer.  Dredge the chicken prior to frying.  Place one piece of chicken at a time in the flour to coat all over.  Remove from flour, shake off access and dip in egg mixture.  Remove from egg mixture allowing access egg to drip back into bowl.  Place chicken in chopped almond & panko bread crumb mixture coating well on all sides.  Carefully place in deep fryer and allow to fry for 13 minutes or until golden brown.  Remove from oil and allow chicken to dry on an absorbant surface (paper towels).

 

Baked Broccoli & Cheese Directions
Cover a cookie sheet with aluminum foil. Spread a layer of frozen chopped broccoli  (or fresh cut broccoli) on the cookie sheet.  Drizzle with olive oil and sprinkle with salt and pepper.  Bake at 350 degrees for 20 minutes or until the broccoli is tender.  Remove cookie sheet from oven, generously sprinkle your favorite shredded cheese over the broccoli and return it to the oven for 5 more minutes.  Remove from oven and serve hot.
